½ cup whole spelt flour
½ cup unsweetened apple sauce
1 tbsp honey
2 eggs, beaten
2 tsp coconut oil for frying
Mix all of the ingredients in a small bowl.
Heat a Teflon frying pan (a pancake pan is preferable, of course).
Grease the pan with the coconut oil and pour the batter into the pancake pan or onto the frying pan until several small pancakes are formed.
Lower the flame to moderate heat.
When the edges become firm and bubbles start forming in the pancakes, flip the pancakes carefully.
Fry the other side until golden.
Continue making pancakes in the same manner with the rest of the batter.
Divide into 2 servings and serve.
