Adzuki Bean, Tofu and Orange Vegetable Stew

4 servings


2 tbsp olive oil

2 white onions, chunked

2 tsp turmeric

1 tsp cinnamon

½ tsp salt

4 carrots, thickly sliced

1 large sweet potato, cut into large cubes

2 cups boiling water

2 cups cooked adzuki beans

600 gr tofu, diced

3 tbsp maple syrup


Heat the olive oil in a large pot and sauté the onion seasoned with all of the seasonings.

Add the carrots and sweet potato and continue the sauté, mixing well so that the vegetables are coated with all of the seasonings.

Add the water and bring to a boil. Cook the vegetables over a high flame for 10 minutes.

Add the cooked adzuki beans, the maple syrup and the tofu cubes to the pot and mix well with the vegetables.

Lower the flame and simmer for 30 more minutes.

Divide into 4 servings and serve.
