Zucchini Spaghetti,Cherry Tomatoes and Tofu

(1 serving)


4 large, firm zucchini

½ packet of tofu, cut into small cubes (150 gr)

½ cup cherry tomatoes, halved

1 tbsp olive oil

1 clove of garlic, thinly sliced

5 fresh basil leaves, washed and chopped

Salt and ground pepper


Use a peeler or spiralizer to cut the zucchini into spaghetti strips.

Sauté the garlic and basil lightly in olive oil. Add the tomatoes and sauté quickly.

Add the zucchini strips and sauté while stirring constantly.

When the zucchini has softened, add the tofu cubes and fry for 2 more minutes.

Season with salt and pepper and serve.
