Pumpkin and Cinnamon Spelt Muffins

12 servings

Ingredients:

1 cup whole spelt flour

2 cups cooked pumpkin

2 eggs

4 tbsp olive oil

4 tbsp honey

1 tbsp cinnamon

½ packet baking powder

Cooking spray

Preparation:

Preheat the oven to 180 degrees celsius.

Mix all of the ingredients in a food processor to a smooth consistency.

Spray a muffin pan with the cooking spray and divide the mixture among the 12 muffin cups.

Bake for 25 minutes. Remove from the oven and set the muffins aside to cool.

Store in an air-tight storage container in the refrigerator.

May be warmed slightly before serving.

Each muffin is equivalent to one snack.
